SuperClear Gelatin will work perfectly for fruit tarts! This creates a firmer set, so you do not need as much as you would with general purpose culinary gelatin found in the supermarket. We would suggest approximately 1.5-2 teaspoons per ½ cup liquid (1/4 cup cold and ¼ cup boiling).

It depends on what you are making but generally it takes 30-60 minutes to set and 3-4 hours for a hard set. 

This all depends on what you are making. Typically, we recommend ¼ ounce of gelatin for every 2 cups of water for standard firmness. Decrease of increase the amount of water for your particular needs. At this ratio, one 2 lb bag will produce approximately 250 servings at 8 oz each (2,000 oz of finished gelatin).
