Collagen Jalapeno Quinoa Bites

 

I don’t know about you, but I am constantly looking for recipes for savory snacks that are healthy. I love chips and every other unhealthy snack out there and I need to have something to replace them with if I don’t want to go through a whole bag of something naughty in the afternoon.

This recipe is a perfect fast and delicious savory snack for me. I love jalapeno poppers and that’s exactly what these taste like! With jalapenos and two types of cheese packed into these quinoa bites, how could they not be delicious? Even better, these bites do double duty. They satisfy my mid-day cravings and they help me stick to my daily collagen regimen! These bites contain Traditional Tonic Nourishing Collagen which is good for your joints, hair, skin, nails, and even brain.

One of the best things about this recipe is that it’s easy to make. Aside from the ingredients, all you need is a mixing bowl and a mini muffin tin and you’re ready to go. Of course, if you don’t have a mini muffin tin, you could make larger bites and cut them in half or form small cups out of tin foil and set those on a baking sheet. You can also change up the ingredients a bit if you want to. Try using pickled jalapenos for a different flavor or adding in some onion.

Makes: 24 bites

 

Ingredients:

  • 3/4 cup quinoa (cooked and cooled)

  • 1 1/2 cups veggie broth

  • 3 scoops Traditional Tonic Nourishing Collagen

  • 1/2 cup chopped jalapenos

  • 2 cloves garlic

  • 2 eggs (beaten)

  • 2 Tbsp. cream cheese

  • 1 1/2 cups shredded cheddar

Directions:

  1. Preheat oven to 350 degrees and grease mini muffin tins
  2. In a large bowl, mix all ingredients until well combined
  3. Transfer mixture to the mini muffin tins (make sure they’re not over-filled)
  4. Bake 15-20 minutes until cooked through and golden.
